Recipe: Chicken-Cilantro Pasta Sauce (with chicken-cilantro sausage)

Chicken-Cilantro Pasta Sauce
Serves 4

1 lb chicken-cilantro sausage, casing removed
1-2 TB organic extra virgin olive oil
1 onion, chopped
1 can (14.5) organic tomato sauce
1-15 oz can chicken broth, low sodium
1 bunch fresh cilantro, chopped
ground black pepper, to taste

Saut chicken sausage and onion in 1 to 2 tablespoons olive oil (as little as possible).n Add chicken broth and simmer for 15 minutes. Add tomato sauce; stir and cover and simmer for 5 to 10 minutes. Turn off heat. Add cilantro and black pepper and let steep for 5 minutes. Serve over pasta, rice or couscous.
