Recipe(tried): Chicken Curry with Apricots

CHICKEN CURRY with APRICOTS

2 Tbls oil
6 chicken fillet breasts cut into small peices
2 large onions sliced
2 cloves garlic crushed
2 tsp freshly grated ginger
2 Tbls plain flour
1 Tbls medium strength curry powder( I make my own,will gladly post rec.)
1 tsp cumin
1/2 tsp ground cinnamon
1 1/4 cup chicken stock
heaped Tbls mango chutney
1 Tbls lemon juice
salt and pepper to taste
1 small can apricot halves,drained

Fry chicken in heated oil til browned nicely,remove and keep warm. Fry onions, garlic and ginger in the oil til just soft,add spices and flour and stir-fry for 1 min. add stock slowly and stir til thickened then add chutney and
seasoning.Return chicken to pan and simmer very gently over a low heat for about 30 mins or until chicken is tender.Add apricots and lemon juice and heat through. Serve with sambels of choice and lots of fluffy rice.
