I don't have a recipe called that but I have this one that is cheap and easy. I would say to just cook the ingred. on the stove instead of using the pie crust or put it in a casserole dish in the oven. I would put it in a loaf of italian bread, but, I really am not sure what Po Folks Pie is. I hope you can use this.
Here is the recipe for one pie, it usually serves two hearty eaters who would eat only pie (no bread or anything) This is very filling
CHICKEN POT PIE
2 cans cambells cream of potato soup
1 cup cooked veggies
-Cut them very small and cook them in a chicken broth or saute
-Use any you want, I use any combination of Cauliflower, zuccini and carrots. (My mother uses canned veggies and I imagine frozen would work as well.)
-for 4 pies, I would get two heads of cauliflower, four med zuccini and three medium carrots
-the beauty of this is using leftover veggies for another dish the next night so don't worry if you cook too much. I like to make chicken soup with the leftovers, just save the broth, use any leftover veggies and cook extra chicken. (scroll down with arrow keys for the rest)
2 small cans cooked chicken OR one large can OR one large boneless chicken breast, cooked and cubed small (if you use cans, put chicken in with juice, if you use fresh, use 1/4 cup chicken broth with it)
1\4 cup milk
top and bottom pie crust-deep dish works best (frozen, refrigerated, or your favorite homemade crust)
Cook veggies and chicken, if applicable, as stated above. Mix all ingredients well. Don't worry if it looks like a lot, start dividing the mixture between the amout of pies you choose. You should cook the bottom crust (brown it about 10 min) if you want it more crispy, otherwise it will be kind of doughy,(use directions to pie crust on package or book) Heap it up until pie is overfull and add top crust. Sorry, I do not have a fancy pie crust design. Cook at preheated 350 oven for approx. 30 min., check after 20 min, cooking time may vary, due to oven temps, pie crusts, etc. so keep an eye on the pie! Remember, it is all cooked, you are just warming it. Also, if you serve anything with it, like bread, you won't need as much, but it's always great for leftovers and better safe than sorry. I promise you, it seems so simple, but it is sooo good.
