CHICKEN SOUP SALAD
1 envelope unflavored gelatin
1/4 cup water
1 (10 3/4 oz.) can condensed cream of chicken soup, undiluted
1 (3 oz.) package cream cheese, softened
1/2 cup mayonnaise
juice of 1 lemon
1/2 teaspoon grated onion
1 carrot, grated
2 hard-cooked eggs, grated
1/2 cup diced celery
1/4 teaspoon salt
1 cup diced cooked chicken
Soften the gelatin in 1/4 cup water.
Bring the soup to a boil and pour over the gelatin, stirring constantly until gelatin is dissolved. Cool.
Combine the cream cheese, mayonnaise and lemon juice and mix well, then add to the gelatin mixture. Add the remaining ingredients and chill until firm.
