Chicken Spectacular

3 cups chicken -- cooked and shredded
1 package Uncle Ben’s fast-cooking long grain and wild rice
2 cups chicken broth
1 medium onion -- chopped
1/2 cup mayonnaise
1 can cream of celery soup
1 jar pimientos -- chopped
1 can French-style green beans
1 can water chestnuts, canned -- sliced
salt and pepper -- to taste
1 cup crackers -- crushed
1/4 cup butter
Cook onion and rice in chicken broth, substituting broth for amount of water as listed in package directions.
Mix all ingredients together, except chicken and green beans. Add green beans and toss lightly.
Pour half of mixture into greased casserole dish and layer chicken over rice mixture. Cover chicken with remaining rice mixture.
Bake for 30 minutes at 350 degrees.
Remove from oven and top with crushed crackers; dot with butter and bake another 10 minutes.
NOTES : Ritz crackers work best with this Recipe.
