Tasty Casserole
Makes 6 to 8 servings
SAUCE
2 Tablespoons butter
2 Tablespoons flour
1 cup milk
1 package (3 oz.) cream cheese
2 oz. Velveeta cheese
Melt butter in microwave, stir in flour till smooth. Blend in milk. Dice cheeses and add to mixture. Microwave on HI for 2 minutes, then stir. Repeat this step until thickened.
VEGETABLE
1 box (10 oz.) broccoli
1 box (10 oz.) cauliflower
If using fresh vegetables, blanch for 5 minutes. Place in rectangular glass casserole. Pour sauce over vegetables.
TOPPING
6 strips fried bacon, crumbled
1/3 cup round crackers, crushed
First sprinkle on bacon then crackers. Bake at 350F for 30 minutes.
