Butter Lettuce Salad

This is one of my very favorites

1 head butter lettuce
1 orange, or tangerine
slivered almonds, toasted
green onions

For the dressing;
3 tbsp. olive oil
2 tbsp. rice vinegar (found in Oriental Foods section of your supermarket. (no substitute, please)
salt and pepper

In your salad bowl, put the olive oil, the rice vinegar, and some of the chopped green onions. Press the green onions into the oil to release the flavor. Salt and pepper to taste.

Toast the slivered almonds (necessary for best flavor). (I put mine on a sheet of aluminum foil, spray with Pam spray, and toast in the toaster oven. Watch closely, they will burn quickly after the first 45 seconds. They can also be toasted in a frying pan, coated with Pam spray.) Peel and section the orange/tangerine, letting the juice fall into the salad bowl. Toss and enjoy.
