Roasted Chicken with Garlic

Clean and dry one or two whole roasting chickens. Marinade them in a mixture of white wine, regular vinegar, and crushed garlic over night. Take some whole fresh garlic cloves and push them as far under the skin of the bird as you can right before the chicken is ready to be cooked. Take some butter and mix your favorite herbs and spices into the butter to make a paste and than spread it all over the chicken, put it in a baking dish, cover it with aluminum foil and than bake it in a 400 degree F oven for an hour or so than take the foil off and bake it till the chicken's done and the skin is golden brown.
