Recipe(tried): Chickpea and Hearts of Palm Salad - quick summer fare

Salads - Assorted
CHICKPEA AND HEARTS OF PALM SALAD

1 can (mine was 19 oz.) drained canned chickpeas (garbanzo beans)
1 or 2 chopped plum (Roma) tomatoes
1/3 cup diced Provolone cheese
1/4 cup finely chopped red onion
1 (14 oz) can hearts of palm, drained and cut into bit-sized pieces
1 tablespoon minced fresh parsley (I just put in a good portion of dried parsley.)
2 tblsp. red wine vinegar
1 tsp. olive oil

As I normally do, I doubled the "sauce" portion of the recipe. I think I even increased the vinegar to 3 tblsp.

I think this is one of those recipes you can totally adjust to your own taste. I add more tomatoes and more onion than called for. Probably more cheese too! lol. I've made this twice and the second time I doubled it so no problem there either.

And now, this is what I am having for dinner and it is waiting patiently for me.
