Recipe: Heart of Florida Salad

Our Publix grocery store just published this recipe in their newspaper insert. If you don't know what mojo marinade is..it's a citrus (lime/orange) which we easily find bottled here in Florida or any place that sells Latin foods.

HEART OF FLORIDA SALAD

1/4 cup mojo marinade
1 tablespoon extra virgin olive oil
1 tablespoon honey
2 medium tomatoes
1/2 seedless cucumber
1 (14-ounce) can cut hearts of palm (drained)
2 tablespoons sliced black olives

Combine mojo, olive oil and honey in salad bowl.

Cut (rinsed) tomatoes and cucumber into bite-size pieces; add with remaining ingredients to dressing. Stir until well coated. Chill until ready to serve.
