Recipe: Chile-Egg Puff

Chile-Egg Puff

Serves about 10

10 eggs (or Eggbeaters)
1/2 cup flour
1 tsp baking powder
1/2 tsp salt
1 pint small curd cottage cheese
1 pound shredded jack cheese
1/2 cup melted butter
8 oz diced green chiles

Beat eggs until light and lemon colored. Add flour, baking powder, salt, cottage cheese, jack cheese and melted butter. Blend until smooth. Stir in chiles. Pour into well buttered 9x13 baking dish. Bake at 350 for 35 minutes or until top is browned and center appears firm. Can also test with knife - if blade comes out fairly clean - it is done.
