Recipe: Chimichurri Sauce (2)

Chimichurri Sauce

You can mince the ingredients by hand or use a food processor, which is faster and easier. There are many variations on this condiment, and it is served principally with parilladas, barbecued steaks and other meats, but will go with just about anything you wish.

1/2 cup olive oil
2 tablespoons fresh lemon juice
1/3 cup minced fresh parsley
1 clove garlic
2 minced shallots
1 teaspoon minced basil, thyme or oregano, or mixture
salt and pepper to taste

Combine all ingredients and let set for at least 2 hours before serving.

Chimichurri Sauce

1/4 cup white vinegar
2 tablespoons extra-virgin olive oil
1/2 teaspoon salt
6 garlic cloves
3 bay leaves
2 jalapeno peppers, stems removed
1 cup minced fresh parsley
1/4 cup minced fresh oregano

Place first 6 ingredients in a blender; process until smooth. Add parsley and oregano, and stir well.
