Recipe(tried): Canned Apples (correction 9-23-08)

Preserving - Fruit
This is a recipe my 83 year old mother has used for many, many years, and even again this year.

Start out with 2 gallons of cored and sliced apples, can be peeled or not. (I prefer peeled)

Sprinkle with a generous amount of fruit pectin.
Pour 4 cups sugar over apples
Sprinkle 1/2 cup apple cider vinegar
Cover and let set overnight.

Next morning put cans and flats in pan covered with water. Heat until hot while cooking apples. The apples will cook very quickly, about 30 minutes until tender.

(Process in boiling water bath following the time for canned apples - pints for 20 minutes.)

Wonderful for apple pies, as a side dish of fried apples or fried pies.
