SGK,
Since you mentioned that you like the sesame topped noodles before (was that you?), I typed out this little dish for you... Don't know if you will like it, please have a look. I hope the summer is over soon!

Chinese Ham and Bean Thread Salad
1 3/4 oz (50g) bean threads (these are the driedn, fine clear noodles called "Tung fen". The best ones are from "Long Ko".)
or 2 c. bean sprouts (rid of the roots if you have the time.)
1 C. shredded ham (bets use Virginia ham)
1 each (shredded): cucumber, carrot
5 T. sesame salad sauce (see notes below)
Cook bean threads in boiling water for 1 minutes; remove and rinse under cold water then drain. Cut bean threads into 4-inch long sections them mix with other ingredients and salad sauce. Beat when serve cold.
**Sesame Salad Sauce
Mix together 1 T. of sesame paste (or peanut butter if you can't have the other) and 1 T. soy sauce, 6 T. of basic salad sauce and 1/2 T. of black or white sesame seeds.
When I am lazy, I just use commercially made Japanese Mayo for the basic salad sauce... My basic salad sauce has been posted here on TKL(I think)but I will repeat it again here.
Basic salad sauce:
1 egg yolk
1 t. mustard powder or sauce
1 t. each: salt, sugar
3/4 c oil
1 T. vinegar
Put the first 3 items in a container. Gradually add and stir oil into the container; do not add too much oil at a time. If sauce becomes hard, add a little vinegar to soften it. Continue adding and stirring oil and vinegar to the containter until all ingredients are mixed well.
