Recipe(tried): Chipa Guazu - Paraguay Corn Pie

CHIPA GUAZU (PARAGUAY CORN PIE)

2 onions, chopped
1/2 cup cooking oil
2 tomatoes, peeled and sliced
1 small pkg Jiffy corn bread mix
1 can creamed corn
3 eggs, separated
1/2 cup sliced black olives
1/2 lb Monterey Jack cheese, coarsely grated
3 egg whites

Saute onions in oil only until soft.

Add tomatoes and cook 5 minutes.

In mixing bowl place dry corn bread mix and stir in creamed corn. Add 3 egg yolks, fried onion and tomato mixture, olives, and last, the cheese.

Beat the egg whites stiff and fold in. Pour into a greased shallow baking dish and bake for approximately 1 hour or until firm.

Serve immediately.
