Recipe: Chive and Oatmeal Crackers

CHIVE AND OATMEAL CRACKERS

1 cup rolled oats, finely ground
1 cup unbleached flour
1 teaspoon baking powder
1/4 teaspoon salt
1 tablespoon finely chopped chives
3 tablespoons boiling water
6 tablespoons margarine

Preheat oven to 350. Grease several baking sheets.

In large mixing bowl, mix together oats, flour, baking powder, salt and chives. Rub in margarine until mixture resembles bread crumbs. Make a well in the center and add boiling water. Mix with wooden spoon to make a firm dough.

Knead dough on lightly floured surface until smooth, then roll it out to about 1/8-inch thickness. Using a 2- inch plain round cutter, cut rounds out of dough and place them on prepared baking sheets. Knead again and reroll trimmings, cutting out rounds until all dough is gone.

Bake crackers until cooked through and very lightly browned, 20-25 minutes. Transfer to wire racks to cool.

These may be stored in an airtight container for one week.

Makes 40 crackers
