Chocolate Cream Pie
3/4 cup sugar
1/3 cup cornstarch
2 squares unsweetened chocolate - cut up
1/2 tsp salt
2-1/2 cups milk
3 egg yolks - slightly beaten
1/2 tsp vanilla
9 in baked pie shell
Cream Topping
1 cup heavy cream
2 tbls confectioners sugar
1/2 tsp vanilla
In top of double boiler combine the cornstarch sugar, salt and chocolate. Mix well. THen gradually stir in milk.
Cook over boiling water till mixture thickens - about 10 min. Cook, covered - stirring occasionally 10 more minutes.
Gradually stir 1/2 of the hot mixture into the beaten egg yolks. Return to rest of mixture in double boiler and cook over boiling water about 5 min- stirring occasionally.
Remove from heat and stir in vanilla.
Pour filling into baked pie shell and refrigerate about 2-3 hours.
Make cream topping about 1 hour before serving- Beat cream with sugar and vanilla till stiff.
Spread over pie.
