Recipe: Chocolate Potato Cake (6) + Explanation

Hi!! Since I've been posting all these collections, I feel like I owe a little explanation about why I'm doing it!! I love to bake, and have always done a lot of it, but since February have been on a diet where I can't eat any sugar, flour, or fruit (I've lost 71 pounds which is GREAT, and I have 17 to go). I was developing serious baking withdrawal, so started haunting your great board, which actually is helping me out a great deal. I've printed out LOTS of your recipes, so thought I should start contributing back. The way I generally bake is to do what I'm doing here-collect a bunch of different recipes for whatever it is I'm interested in baking, see how the recipes differ, and either bake the best of the lot or make up my own with components of all the recipes. So that is my explanation, and hope I'm not driving you all crazy!! LottieCHOCOLATE POTATO CAKE: From the Kitchen of wadeville_Iowa
Ingredients:
3/4 c butter, softened
1-1/2 c sugar, divided
4 eggs, separated
1 c hot mashed potatoes
1-1/2 c flour
1/2 c baking cocoa
2 tsp baking powder
1 tsp ground cinnamon
1/2 tsp salt
1/2 tsp ground nutmeg
1/4 tsp ground cloves
1 c milk
1 tsp vanilla
1 c chopped nuts
FLUFFY WHITE FROSTING:
2 egg whites
1-1/2 c sugar
1/3 c water
2 tsp light corn syrup
1/8 tsp salt
1 tsp vanilla

In a mixing bowl, cream butter and 1 cup sugar. Add egg yolks; beat well. Add potatoes and mix thoroughly. Combine flour, cocoa, baking powder, cinnamon, salt, nutmeg, and cloves; add to creamed mixture alternately with milk, beating until smooth. Stir in vanilla and nuts. In a mixing bowl, beat egg whites until foamy. Gradually add remaining sugar; beat until stiff peaks form. Fold into batter. Pour into a greased and floured 13x9x2 inch baking pan. Bake at 350 degrees (F) for 40-45 minutes or until cake tests done. Cool. Combine first five frosting ingredients in top of double boiler. Beat with mixer for 1 minute. Place over boiling water; beating constantly for 7 minutes, scraping sides of pan occasionally. Remove from heat. Add vanilla; beat 1 minute. Frost cake.

Mashed potatoes give this cake a wonderful texture.
Ingredients:
1 cup butter
2 cups packed brown sugar
4 eggs
1/2 cup mashed potatoes
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1 cup milk
1 ounce semisweet chocolate, melted
1 cup pecans

Cream butter; gradually add brown sugar, beating well. Add eggs, one at a time, beating well after each addition. Add mashed potatoes, beating mixture well. Combine flour, baking powder, cinnamon, nutmeg, and cloves; add to creamed mixture alternately with milk, beginning and ending with flour mixture. Stir in melted chocolate and pecans. Pour batter into a well-greased 10-inch bundt pan. Bake at 350 degrees F (175 degrees C) for 1 hour or until cake tests done. Cool in pan 20 minutes; remove cake from pan, and cool completely before serving.CHOCOLATE POTATO CAKE: Karen Jensen, Evanston (suntimes.com)
Ingredients:
1 1/3 cups corn oil
1 1/2 cups sugar
1 cup warm, plain mashed potatoes (from scratch or instant)
1 cup Ghirardelli Ground Chocolate or 3 (1-ounce) squares
semisweet chocolate, melted
2 cups flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground allspice
1/4 teaspoon ground cloves
1 cup milk
4 eggs, beaten
2 cups walnuts

1. In a large mixing bowl, beat oil and sugar with an electric mixer at high speed for 2 minutes.
2. Reduce speed to medium. Slowly add mashed potatoes and chocolate, beating until combined. Stop mixer and scrape down the sides of the bowl.
3. In another large bowl, sift together flour, baking powder, cinnamon, nutmeg, allspice and cloves. Add flour mixture to mashed potato mixture alternately with the milk in several additions until all is combined.
4. Add beaten eggs and walnuts; mix just until combined.
5. Grease and flour 2 (9-by-5 1/2-by-2 1/2-inch) loaf pans. Pour cake batter into pans.
6. Bake in a preheated 350-degree oven until a toothpick inserted in the center of the cakes comes out clean, about 35 to 40 minutes.
7. Place pans on wire racks and let cool for 20 minutes.
8. Remove cakes from pans and cool completely on racks. Slice and serve, or store whole in plastic bags. These cakes also freeze well.CHOCOLATE POTATO CAKE W/ CREAM CHEESE ICING (Helen Peagram)
1 c Hot mashed potatoes
2/3 c Butter
2 c Sugar
3 Separated eggs
2 c Sifted flour
3 ts Baking powder
1 ts Cinnamon
2/3 ts Salt
1/2 c Cocoa
1/2 c Milk
Frosting:
1 pk Cream cheese
1 ts Vanilla
1 tb Butter
2 c Powdered sugar

Cake: Preheat oven to 350 degrees. Cream butter and sugar. Add egg yolks and hot mashed potatoes and mix well. Sift together flour, baking powder, salt and cocoa. Add flour mixture alternately with milk to sugar mixture. Beat egg whites until stiff and fold in. Pour into 2 greased and lightly floured 9-inch layer cake pans. Bake 45 minutes or until done. Cool on rack for 5 minutes before removing from pans. When cold- frost with cream cheese frosting. Frosting: Mix cream cheese, vanilla, butter and powdered sugar together and frost cake. Ingredients:
2 c. sugar
1 c. shortening
4 eggs
1 c. warm unseasoned mashed potatoes
1/2 c. cocoa
2 c. flour
1 c. buttermilk
1 tsp. baking soda
1 tsp. vanilla
1 c. nuts, optional

Cream shortening and sugar. Add eggs and beat until light and fluffy. Combine flour, cocoa and baking soda. Stir mashed potatoes into sugar mixture. Add flour mixture alternately with buttermilk, starting and ending with dry ingredients. Stir in nuts, if desired. Pour into a greased and floured 9x13 pan. Bake at 350 degrees for 35 to 40 minutes. Ingredients:
2 cups flour
2t baking powder
1t cinnamon
1/2t nutmeg
1 1/2 cups sugar
1/2 cup raisins
1 cup mashed potatoes
1/2 cup melted chocolate (unsweetened)
3/4 cup sweet milk
1 cup chopped nuts
1/2 cup butter.

Sift dry ingredients 3 times. Cream butter and sugar until fluffy. Add dry ingredients to creamed mixture. Alternate with milk. Add nuts and raisins after mixing in the mashed potatoes and melted chocolate. Blend well. Bake in 2 buttered or lined 8x8 pans in a 350 degree oven for about 35 minutes. Ice with One Minute Fudge Frosting.
ONE MINUTE FUDGE FROSTING: 2 squared unsweetened chocolate, 2 cups white sugar, 1/2 cup sweet milk, 1/2 cup butter. Melt chocolate, add other ingredients. Boil for 1 minute. Set off the heat and beat until spreading consistency.
