Recipe: Cinnamon Crispies

BUNUELOS (CINNAMON CRISPIES)
3 c. flour
1 tsp. baking powder
1 tsp. salt
Sugar and cinnamon mixture
2/3 c. milk
4 tbsp. butter
2 beaten eggs

Heat milk and butter until melted. Cool mixture, then add beaten eggs. Sift
dry ingredients. Add to creamed mixture. Knead until smooth. Roll into little
balls and roll out like tortillas, stretching out as thin as possible. Deep
fry. Drain on paper towels and sprinkle with cinnamon sugar mixture.


CINNAMON CRISPIES
4 c. flour
1 tsp. soda
1 1/3 tbsp. baking powder
1 1/3 tbsp. salt
1 1/2 tbsp. cinnamon
4 c. quick cooking oats
1 3/4 c. chopped nuts
2 1/4 c. shortening
4 1/2 c. sugar
4 1/3 tbsp. molasses (1/3 c.)
1 tbsp. vanilla
4 lg. eggs

Sift dry ingredients together except sugar. Mix in nuts. Cream shortening
and sugar until blended. Add molasses, vanilla and eggs to the creamed mixture
and beat to blend. Add dry ingredients and mix well. Roll in small balls or
drop by spoonful on a greased cookie sheet. Bake at 350 degrees for 15 minutes.
Makes 100-130 cookies.


OATMEAL - CINNAMON CRISPIES
2 1/2 c. (5 sticks) butter, softened
5 c. sugar
1/3 c. dark molasses
4 eggs
1 1/3 tbsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tbsp. cinnamon
1 tbsp. vanilla
4 1/3 c. all-purpose flour
4 3/4 c. old fashioned rolled oats
(not instant)
2 c. finely chopped pecans

Preheat oven to 375 degrees. Grease 2 baking sheets. In large bowl cream the
butter. Add sugar gradually. Then molasses and beat until light and fluffy.
Beat in eggs, one at a time. Shut off mixer and add baking powder and soda,
salt, cinnamon and vanilla to the batter. Turn the mixer back on and blend. Add
the flour and blend. Drop by rounded teaspoonfuls onto baking sheets. Bake 5-9
minutes or until the cookies are medium brown and a bit crinkly looking. Allow
the cookies to set on the sheets for about 3 minutes, then remove to a wire rack
and let cool completely. These freeze very well.


CINNAMON CRISPIES
Cream together in large bowl:2 1/4 c. Crisco
4 1/2 c. sugar
4 1/2 tbsp. molasses
1 tbsp. vanilla

Add:4 lg. eggs
4 c. flour, unbleached
1 tsp. baking soda
1 1/3 tbsp. baking powder
1 tsp. salt
1 1/2 tbsp. cinnamon
4 3/4 c. rolled oats
1 3/4 c. nuts, sunflowers seeds
1-1 1/2 c. raisins

Bake at 350 degrees for 8 minutes. Cool on pan for 2 minutes and carefully
lift to rack to cool.



CINNAMON SUGAR CRISPIES
2 c. flour
1/3 c. sugar
1 c. butter, softened
1 egg
1/2 tsp. baking soda
Dash salt
2 tsp. vanilla

Heat oven to 375 degrees. In large bowl combine all cookie ingredients. Beat
at low speed, scraping bowl often until well mixed, 2-3 minutes. Shape rounded
teaspoonful of dough into 1 inch ball.SUGAR MIXTURE:
1/4 c. sugar
1/2 tsp. cinnamon

For sugar mixture combine the sugar and cinnamon. Roll balls in mixture.
Place 2 inches apart on greased cookie sheets.36 pecans halves

Place 1 pecan half in center of each cookie. Bake 10-14 minutes or until
edges are lightly browned. Remove immediately.
