JAMMY TEACAKES
1 cup salted butter, softened
1/2 cup confectioners' sugar
2 teaspoons pure vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
1/2 of your favorite fruit preserves or jam
1/4 cup confectioners' sugar for topping
Preheat oven to 325 degrees F. Lightly grease cookie sheets.
In a large bowl cream butter and sugar using an electric mixer. Add vanilla, scraping down sides of bowl as needed. Blend in flour and salt, mixing well until thoroughly combined.
Roll tablespoonfuls of dough into small balls about 1-inch in diameter (like a walnut). Place dough balls on prepared cookie sheets about 1-inch apart. Press down the center of each ball with a spoon, forming a depression. Fill each with preserves or jam.
Bake 15-20 minutes or until golden brown. Transfer cookies immediately to wire racks to cool.
When cookies have completely cooled, dust them lightly with the additional confectioners' sugar.
Makes 2 dozen
