Cinnamon Roll Bread Pudding
3 c. scalded milk
4 eggs, well beaten
1/2 c. sugar
1 tsp. vanilla
1/2 tsp. cinnamon
pinch of salt
2 day old cinnamon rolls
In a large bowl beat eggs; add sugar, vanilla, cinnamon and salt. Add milk. Cut up about 2 cinnamon rolls in a baking dish. Pour liquid mixture over rolls. Put baking dish inside a pan of hot water and bake at 350 degrees for about 35 minutes or until knife comes out clean. Optional: Sprinkle top with nutmeg just before baking.

1 large can Pet milk
1 large can water
several pats of butter or margarine
1/2 can condensed milk
1 Tbsp. vanilla extract
6 stale cinnamon rolls, cut into cubes
cinnamon to taste
In 2 quart casserole dish, beat eggs and sugar together until smooth; add condensed milk and roll; beat. Add Pet milk, water and vanilla. Then add cubes of cinnamon rolls to mixture and let stand for few minutes. Sprinkle cinnamon and pats of butter or margarine to top; also add cinnamon to taste in mixture when mixing ingredients. Bake in 350 degrees oven (preheated) for 45 minutes to an hour.
Cinnamon Roll Bread Pudding
6 day old cinnamon rolls or old bread
3/4 c. lukewarm milk
3 Tbsp. butter
1/2 c. sugar
2 egg yolks
grated lemon rind
2/3 c. chopped nuts, walnuts, etc.
1/3 c. raisins (optional)
1/2 tsp. cinnamon to taste
3 egg whites, stiffly beaten
Put rolls in a bowl and cover with milk until completely absorbed. Cream butter and sugar until light and fluffy, gradually beat in egg yolks and add grated lemon rind. Blend well. Add soaked rolls, nuts and raisins to egg yolk batter and mix together. Add cinnamon. Beat egg whites until stiff and fold into bread mixture gently. Bake in a greased baking dish 30 to 45 minutes in a 450 degrees oven.
Cinnamon Roll Bread Pudding (microwave)
3 c. cinnamon rolls, cubed
1 c. sugar
1/4 tsp. cinnamon
dash of nutmeg
2 c. milk
3 eggs, beaten
Arrange rolls in 8-inch round dish. Sprinkle with 1/2 cup sugar, cinnamon and nutmeg. In 1 quart measuring cup scald milk on High about 4 minutes. Remove and stir in eggs and 1/2 cup sugar. Pour over rolls. Make sure all roll cubes are soaked. Cover, microwave Medium-high 10 to 11 minutes.
