Recipe: Citrus Vinaigrette Dressing, Benihana's Superb Salad Dressing, Ginger Dressing

Salads - Salad Dressings
Citrus Vinaigrette
Makes about 1 1/4 cups

1 large orange
1/4 medium grapefruit
1/2 medium lime
1/2 medium lemon
1/2 cup extra virgin olive oil
2 tbsp champagne or white vinegar
3 tbsp soy sauce
1/2 tsp hot chili sauce or red pepper sauce
20 pink peppercorns
1 tsp finely chopped fresh ginger
5 tbsp fresh cilantro leaves
1 tsp salt (opt)

Peel orange, grapefruit, lime and lemon. Cut each into segments over a large stainless steel bowl to catch excess juices. Carefully dice segments, cutting not crushing them. Add oil, vinegar, soy sauce and chili sauce to fruit juices in bowl; whisk to blend. Add peppercorns, ginger, cilantro, diced fruit and salt; stir to combine.

BENIHAHA'S SUPERB SALAD DRESSING
Makes: 1 cup

1/2 cup soybean oil
1/4 cup white vinegar
3 tbsp tomato paste
1 tbsp soy sauce
1/2 tsp salt
1/2 tsp ground ginger
1/2 cup celery, sliced thin
1/4 cup onions, coarsely chopped

Combine all ingredients in an electric blender. Mix at
medium speed for 3 to 5 seconds, until celery is
finely grated. Add desired amount to salad and toss.

Ginger Dressing

1 tbsp rice vinegar
1 tbsp vegetable oil
1 tbsp sesame oil
1 tbsp grated fresh ginger
1 tsp soy sauce

Mix and toss
