ALOO MUTTER (PEAS AND POTATOES)
2 medium onions
1-inch piece ginger
2 tsp butter or ghee
1 tsp cumin seeds
1 tsp garam masala
1/2 tsp tumeric
chili powder to taste
salt to taste
2 green chilies, minced
1 large tomato, chopped
1/2 cup curds
1/4 cup peas
4 large potatoes, peeled, cubed
1 cup water
fresh coriander (for garnish)
Grind onion and ginger to paste.
Heat the butter or ghee and fry the onion-ginger paste to golden brown.
Add all spices, green chiles, and tomatoes and fry briefly.
Add curd and cook till ghee separates.
Add peas and potatoes; fry for 5 minutes. Add water, mix, cover, and cook over a gentle fire.
Serve garnished with fresh coriander leaves.
