Oh boy, that is a tough question indeed. I love buttercream and I love 7 minute frosting! It just depends what mood I am in...sometimes I like to use all 7-minute frosting in between the layers, sometimes I like to brush the layers with sweet coconut milk and then put on lemon curd and then the 7-minutes frosting, or I like the buttercream with the lemon curd.
A coconut cake as a birthday cake or a holiday cake is amazing to see! I love the sheen of the 7-minute frosting. And both cakes are enjoyable with a cup of coffee of a glass of ice-cold milk.
I love Ina's version, I love Paula's version and I also love that coconut cake that is soaked in sour cream, sugar and coconut in the fridge for 3 days....that is really good too!
I would love to find a really good old-fashioned chocolate cake recipe, the one with the thick buttercream frosting.
