Recipe: coconut cracking

I saw Rick Bayless, a chef on TV, yesterday make a coconut pie using fresh coconut. He drilled out two eyes with a corkscrew, drained the milk through a strainer, and then placed the coconut in a 350 degree oven for 15 minutes. This makes the coconut flesh come away from the husk. He took it out of the oven and wrapped it in a towel and whacked it with a hammer. Took a small knife and pried the flesh away and peeled the brown stuff off with a pototo peeler. Hope this helps.
