thanks for the suggestion and all the other's! You two are always a great source of information! To be honest, as i said, i had no plans of what to do with it because Simon sneaked it in the shopping trolley so i might take some over to my mum as well and she can use some of it for the cake Eggy suggested. The rest i think i'll grate and store in the freezer for future use in curries, soup etc. I did wonder if i could freeze it as i'm not likely to use it all in one go - fat enough after the holiday's as it is!! LOL! I freeze alot of my herbs etc as it's so convenient and i don't often use stuff in large enough quantites so it would go off otherwise. I freeze ginger, galangal, lemon grass, Kaffir lime leaves, chillis, coriander......The ginger works particularly well as i can just take it out and grate off what i need :) Susan you really made me laugh with the story of your husband and the hammer - i have heard of people doing that and it's exactly what i wanted to avoid! Simon has decided to attack it with our power drill to drain the water and then we have a jigsaw attatchment we can use to cut it!!! Who know's if that will be any better?!!! LOL!
