Recipe: Opening an old coconut

Indian cooking expert Madhur Jaffrey suggests another way of opening an old coconut: Preheat the oven to 400F (medium-hot). Make two holes in the eyes of the coconut, using an ice pick or screwdriver. Drain out the coconut water. Place the coconut in the oven for 15 minutes. The shell should contract. Then hit the coconut with a hammer, and its shell should come off. (Even if it does not, the coconut should break and you should be able to pry off the meat.

Peel any brown skin off the meat with a vegetable peeler or paring knife. Cut the coconut into pieces as desired, or grate with a hand grater, food processor, or blender. After you have grated the coconut, you can store it in the freezer.

(Good luck opening your coconut! To be honest, the one time we tried to open an old coconut, my husband wrapped it in newspaper, placed it on the floor, and went at it with a hammer. Most of it was unusable as a result! I prefer to buy mine already opened in the market!)
