You've hit the nail right on the head - i do have the brown coconut and not the green one. I had no idea that i shouldn't use the water - i would have gone ahead and used it and then i might have been ill for a couple of days!!! ;-)
I really have no idea what to do with the flesh though - yes i can use it in curries etc but i mean, should i just scrape it out and then chop,grate it or what? Sorry to sound thick but i have no idea! I buy my coconut in block form (much easier) but this was Simon's grand idea! He put the coconut into the shopping trolley while i wasn't looking! Now i have to do something with it..... Sigh.....
