Recipe: open a coconut without a machine

hi karen,
this is delia smith's way. it's written in her "how to cook I". she said using a hammer and a screwdriver to punch a hole in the tip and the shell will crack. then turn the coconut carefully the other way round into a bowl so you can save the water. after the water is drained, you can opne the shell easily and get the flesh. however, from what you descirbed, you are trying to open an old coconut that has brown outer layer, right? if so, the liquid is not recommended for drinking. this type of coconuts are used for their flesh in curries and other dessert. if you want the drinking type, you have to look for the green-shelled coconut or those stored in the cold storage section (light beige shell and usually good ones are from Thailand). and that makes cool drinks.
