Recipe(tried): Coconut rice (using dessicated coconut, and leftover cooked rice)
Side Dishes - Rice, GrainsI just had to post this! It is my new favourite thing to do with leftover rice. I saw it on TV (Feast India show) and here is my version of their recipe.
I used a non-stick deep-ish frypan. Get everything ready to go before you start, because this comes together very fast. And that coconut burns like heck; as soon as it starts to brown, you need to move quickly!

COCONUT RICE:
500g (2.5 cups) leftover basmati rice (cold)
1 tsp black mustard seeds (I had yellow, so that's what I used)
10 curry leaves
50g (1/4 cup)freshly grated coconuts or shredded coconut
1 long green chili pepper, thinly sliced on angle
1 red onion, finely chopped
1 handful picked fresh cilantro, rinsed, dried & chopped
olive oil & sea salt (I used a sprinkle or two of coarse)
Dry fry the coconut (no oil added to the pan) until golden brown, then add the red onion and the chili pepper, curry leaves & mustard seed. Stir and cook for about 2 minutes.
Separate and sprinkle the rice over top of the mixture in the pan, toss to incorporate all the ingredients, and warm everything through. Finish with the cilantro and a light sprinkle of olive oil, season with some fresh sea salt, and serve.
