HOMEBOY HOMEFRIES2 (15-oz) cans sliced new potatoes, drained
1/2 (4-oz) jar chopped mild green chiles, drained small red bell pepper, chopped
1/2 small onion, chopped
1 Tbsp butter
1/8 tsp each salt and ground black pepper
Coat a large skillet with cooking spray and heat over medium-high heat. Add the bell pepper and onion and cook, stirring frequently, until tender.
Dump in the potatoes and chiles. Cook for 10 minutes, breaking up the potatoes. Stir in the butter, salt, and ground black pepper.
Makes 4 servings
Per serving: 119 calories, 3 g fat (22% of calories), 2 g saturated fat, 2 g protein, 20 g carbohydrates, 4 g fiber, 640 mg sodium
