Recipe(tried): Comfort Food Tonight - Butter Roast Chicken, Basil Green Beans, Slow Cooker Baked Apples
Menus Well, my daughter and her husband went back to their home, which is a couple of hours away from me. I miss her already, so tonight we had some comfort food. I also baked some apple/pumpkin streusel muffins when I got home from work, but we haven't tried them yet. They smell good, though! Here's what we had tonight:
Butter Roast Chicken
Basil Green Beans
Baked potatoes
Asiago Bread from Panera's Bakery
Slow Cooker Baked Apples with French Vanilla Ice Cream
Butter Roast Chicken
6-8 boneless, skinless chicken breasts
1/2 cup butter
1/3 cup lemon juice
1 Tbsp. paprika
2 tsp. salt (or a little less to suit your taste)
1 tsp. pepper
1 tsp. brown sugar
1/2 tsp. dried rosemary, crushed
1/8 tsp. ground nutmeg
1/8 tsp. cayenne pepper
Place chicken in an ungreased 9 X 13 baking pan. Combine remaining ingredients in a small saucepan; bring to a boil. Remove from heat and pour over the chicken. Bake, uncovered, at 325 degrees for about 1 to 1-1/2 hours or until juices run clear. Baste occasionally while baking.
Basil Green Beans
Put 3 cans of green beans with the liquid into a large saucepan. Add a few sprinkles of minced onion, or dice 1 small onion and add to the green beans. Cook the beans and onions in the liquid for about 30 minutes or so. Drain, and then add 1/2 stick of butter, a few shakes of basil, salt and pepper to taste. That's all there is to it!
Slow Cooker Baked Apples
6 to 8 medium baking apples, washed, cored, with top third of apple peeled
Filling:
Raisins
Chopped pecans
Brown sugar
Topping:
1 tsp. cinnamon
1/2 tsp. nutmeg
2 Tbsp. butter
1/2 cup water
Place apples in the slow cooker. Fill the apples with raisins/pecan/sugar mixture. Sprinkle with topping spices. Dot with butter. Add water. Cover and cook on low for 8 hours. These are so yummy with vanilla ice cream, or even better with cinnamon ice cream! Sometimes I put them on when I go to bed, and we have them for breakfast the next morning. The only problem is, I wake up in the middle of the night and I can smell them cooking and can't go back to sleep!
