Recipe: Company's Coming Potatoes (2 versions using hash browns and stuffed baked potatoes)

1/3 cup margarine
1 (36 oz.) pkg. frozen hash brown potatoes
1 (8 oz.) jar Cheese Whiz
1 can cream of chicken soup
1/4 to 1/2 cup chopped onions
Salt and pepper to taste
1 pint sour cream
Potato chips (optional)
Melt margarine in casserole dish. Combine potatoes, Cheese Whiz, soup, onion, salt and pepper. Pour into casserole dish and top with sour cream.
Bake at 350 degrees for 45 minutes.
If desired, crumble potato chips over casserole and return to oven for 5 minutes.
Company's Coming Potatoes (stuffed baked potatoes)
Yield: 6 servings
6 medium baking potatoes
Vegetable oil
1/2 cup butter or margarine, softened
2 cups (8 oz.) Cheddar cheese, divided
1 (8 oz.) carton sour cream
1/4 cup milk
1 tsp. chopped fresh parsley
1/2 tsp. salt
1/4 tsp. pepper
Wash potatoes and rub with oil. Bake at 400 degrees for 1 hour or until done.
Cut potatoes in half lengthwise. Carefully scoop out pulp, leaving shells intact.
Mash pulp; stir in butter, 1 1/2 cup cheese, sour cream, milk, parsley, salt and pepper. Stuff shells with potato mixture and sprinkle with remaining cheese.
Bake potatoes at 350 degrees for 20 minutes.
