I used to mail these to my husband before we were married ....he was in the National guard boot camp...He used to hide under his covers with a flashlight to eat them so he didn't have to share!!!!
1 package Duncan Hine's Devil's Food Cake mix
1/2 cup Crisco oil
2 tabsp. water
2 large eggs, beaten slightly
1 cup semi-sweet choc chips
Preheat oven to 350* Blend all ingredients. Drop by well rounded tablespoon onto ungreased cookie sheets...about 3" apart. Bake 10-12 min. No LONGER!! Cool on pan 1 min. Carefully remove and cool on a rack. Keep in an airtight container if you have any to save!! These make your house smell wonderful!!!

1/2 c Butter
1/2 c Sugar
1 Egg; lg
1 ts Vanilla
1 1/2 c Unbleached flour
1/2 ts Baking soda
1/2 ts Cinnamon; ground

6 oz Cheddar; sharp, shredded
1 1/2 c Apples; cored, peeled, chopped
1/4 c Nuts; chopped
Cream the butter and sugar until light and fluffy, then stir in the egg and
vanilla. Add the combined dry ingredients, blending well. Stir in the
cheese, apples and nuts. Drop rounded teaspoonfuls of the dough onto an
ungreased cookie sheet and bake at 375 degrees F. for 15 minutes. Remove
from the cookie sheet and cool on a wire rack or plate.
Servings: 6

1-18 oz. cake mix
8 oz. Cool Whip
1 1/2 c. chopped pecans
I T. powdered sugar
I egg, beaten
Mix ingredients together and beat well.
Roll spoonfuls in powdered sugar at bake at 350 degrees for 12-15 minutes. Do not brown. (Particularly good with Swiss chocolate, strawberry supreme, and lemon cake mixes.)

1 box strawberry cake mix
1/2 c. oil
1 egg
1 tsp. vanilla
1 1/2 c. choc. covered raisins
mix first 4 ingredients with mixer, stir in raisins. Drop on ungreased cooky sheets about 2" apart. Bake @ 350 for 10-12 min. Cool before removing.
these are great to make when the kids forget to tell you they need to bring a snack tomorrow for school.

Makes: 36
1/4 lb (1 stick) butter
2 oz. chocolate-unsweetened
1 egg-slightly beaten
1/4 tsp salt
1/2 tsp vanilla
1/2 tsp baking powder
1/2 cup flour
1 1/2 cup sugar
Melt the butter and chocolate in the top of a double boiler.
Combine with egg and rest of ingredients.
Drop by scant teaspoonfuls on greased cookie sheets.
The finished cookies will be 3 to 4 inches in diameter so space them accordingly.
Bake in preheated 325 degree F oven for about 12 minutes.
Watch carefully to prevent burning.
When nearly cool, remove from the cookie sheet with spatula (a metal spatula works best).
Hint: Press under the cookie with pressure against the sheet and they remove easily without crumbling.
Place on racks to cool completely.

Makes: 2 dozen
1/2 cup margarine
3/4 cup sugar
2 eggs or 1/2 cup Eggbeaters
1 teaspoon vanilla
1/2 teaspoon cinnamon
1 1/4 cups flour
1 teaspoon baking powder
6 tablespoons cocoa
1/2 teaspoon salt
Cream margarine until light then beat in sugar.
Add eggs or Eggbeaters, vanilla and dry ingredients.
Beat until well mixed.
Heat waffle iron about 5 minutes.
Spray waffle iron each time a new batch of cookies is baked with veg. cooking spray to prevent sticking.
Drop a heaping teaspoon of dough onto each section of waffle iron.
Size of dough should be about the size of a whole walnut - do not spread out dough.
Bake 2-3 minutes.
These may be baked on a greased cookie sheet also in a 325 degree oven for 20 minutes.

2 cups brown sugar (firmly packed)
2 eggs
1 cup oil
1 cup cooked pumpkin
3 1/2 cups flour
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon vanilla
1 tsp. cinnamon
1/4 teaspoon ginger
1/4 teaspoon ground cloves
Beat first four ingredients until fluffy, then add remaining ingredients.
Drop by spoonfuls onto greased cookie sheet and bake 350 degrees for 10 to
15 minutes.
FILLING:
2 egg whites
2 tsp. vanilla
4 tbsp. flour
2 tbsp. Confectioner's sugar
4 tbsp. Milk
1 cup Crisco shortening
4 cups Confectioner's sugar
Beat egg whites and vanilla well.
Add flour, 2 tablespoons 10x sugar, milk and shortening until well mixed.
Add 4 cups confectioner's sugar and beat until smooth.
Spread between cooled cookies.

Cream together:
1 Cup Butter
2 Cups Brown Sugar
Beat in:
2 eggs
2 teas. vanilla
Sift together:
2 1/2 Cups Flour
1 teas. Baking Soda

3 Cups Oatmeal & Flour mixture to Butter, Brown Sugar and eggs..Mix well.. Put 2/3 of batter in a 10 1/2 X 15 1/2 cookie sheet and spread out evenly..Heat Choc Chip mixture till smooth then pour and spread on batter..
Over low heat:
2 Cups Choc. Chips
1 can condensed milk ( 14oz.)
2 TBLS. Butter
1/4 teas. salt
Stir till smooth then add:
1 Cup Chopped Walnuts (optional)
1 teas. vanilla
Take 1/3 of the remaining batter and crumble or dot on top of choc..Bake 350 oven for 20 to 25 mins..ENJOY...

2 sticks butter, room temp.
1 1/4 c. sugar
1 c. firmly packed lite brown sugar
2 eggs
1 c. peanut butter
2 t. baking soda
1/2 t. salt
3 c. flour
1 1/2 c. mini chocolate chip morsels
Preheat oven to 350.
In a large bowl, beat butter, sugar and brown sugar with electric mixer til nice and fluffy. Beat in the eggs. Add the peanut butter, baking soda and salt and beat til blended. Add the flour and mix just til blended at low speed. Stir in the chips.
Form dough into 1 inch balls and place 2 inches apart in ungreased cookie sheet. With the tines of the fork, press down in a crisscross fashion flattening them a bit.
Bake cookies for 14 mts. Let cool on sheet 2 mts. then transfer to rack to cool completely.

These bar cookies are simply delicious. They are cut into small squares because they are very rich. When rolled in powdered sugar they look like they come from an upscale gourmet bakery. For the Holidays, use Raspberry jam and watch them disappear....great for gift-giving.
1/2 c. butter softened
1/4 c. sugar
1 c. flour
1/3 c. flour
1/2 t. baking powder
1/4 t. salt
1 c. brown sugar
2 eggs beaten
1/2 t. vanilla
1/2 c. chopped walnuts
powdered sugar
2/3 c. mango jam (or substitute any jam)
1. Mix butter, sugar and 1 c. flour til crumbly.
2. Pat into a greased 9x9 square baking pan.
3. Bake at 350 for 25 mts.
4. Combine 1/3 c. flour, baking powder and salt. Set aside. Beat brown sugar into eggs and add vanilla to mixture. Combine the flour mixture with the brown sugar mixture.
5. Spread jam over baked layer making sure you don't spread all the way to edges and pour the above mixture over. Sprinkle with chopped nuts and bake for 30 mts.
6. Cool in pan. Cut into small squares and roll in a baggy with powdered sugar in it. Arrange on a pretty platter. Great with coffee....

A light confectioners' sugar glaze jazzes up these oatmeal gems. For a delicate Florida citrus note, stir a little finely grated orange zest into the glaze.
Makes about 3 dozen cookies
1 1/2 cups all-purpose flour
2 teaspoons baking soda
1/4 teaspoon salt
1 cup (2 sticks) unsalted butter, at room temperature
1 cup packed light brown sugar
1/2 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
3 cups old-fashioned oats
1 1/2 cups raisins
GLAZE
1 cup confectioners' sugar blended with 2 tablespoon milk or cream.
Preheat the oven to 375 degrees F.
In a medium bowl, whisk together the flour, baking soda and salt.
In a large bowl, beat the butter, brown sugar and granulated sugar until light and fluffy. Beat in the eggs and vanilla. On low speed, beat in the flour mixture. Using a large wooden spoon, stir in the oats and raisins.
Spoon slightly rounded tablespoonfuls of the dough two inches apart onto ungreased baking sheets. Bake for about 14 minutes, or until golden brown. Let the cookies cool on the baking sheets for two minutes, then transfer to wire racks to cool completely.
Brush some glaze on top of each cookie and let sit until the glaze is dry.

3 sticks butter, melted
Add:
1/2 cup molasses
2 cups sugar
2 eggs
beat well
Sift together and add to the above mixture:
4 cups flour
4 tsp soda
2 tsp cinnamon
1 tsp ginger
1 tsp cloves
Refrigerate dough for several hours, make into 1" balls, roll in sugar. Bake at 350 for 8-10 min.

6 eggs, well beaten
1/2 box ( 1/2 lb) confectioner's sugar
4 tbsp melted shortening
1 tbsp lemon extract
1/4 tsp anise oil or extract
3 cups flour
3 tbsp baking powder
frosting:
milk, confectioners
colored sugar, colored jimmies
Blend together eggs, sugar, melted shortening and flavorings.
Sift flour and baking powder and add to mixture to make a soft dough.
If too sticky, add a bit more flour for a soft dough.
Shape into 2 large fat long rolls and flatten tops with finger tips.
Place each on a greased cookie sheet and bake at 375 degrees F for 20 minutes or light golden.
Cool, frost and slice on the diagonal when cold.
For frosting, mix a little milk and powdered sugar to make a thin frosting.
With pastry brush, brush over cookie rolls and sprinkle with colored sugar or jimmies.

Mix (in processor is easiest):
2 cups flour
1 cup sugar
1 teaspoon baking powder
1 teaspoon vanilla
3 whole egg equivalent -- or 3/4c egg whites
2 tablespoons orange juice
1 whole orange zest
1 3/4 cups dried cherries, currants or dried cranberries
Mixture will be thick and sticky.
Form into two long logs on Pam-sprayed cookie sheet.
Bake for 20 minutes.
Let cool 10 minutes or so.
Preheat oven to 350.
Slice into cookies (as thick or as thin as you like) using SHARP knife.
Lay out on cookie sheet (same one ok) and bake 15 minutes per side.
Let cool on rack.
Will harden even more as cool.

Preheat oven to 375 degrees.

Beat in eggs.
Stir flour, soda, salt together and blend into creamed shortening.

1 cup margarine -- softened
1 egg white -- whipped
1 tsp vanilla
2 1/2 cups unbleached flour
1 1/4 cups granulated sugar

1 oz unsweetened chocolate -- melted
1/4 cup nuts -- chopped

Preheat oven at 375 degrees F.
Line a 9 x5 x 3" pan with waxed paper.
In a mixing bowl, combine margarine, sugar, egg white, and vanilla.
In another mixing bowl, combine flour sugar, and baking powder.
Mix wet ingredients with dry ingredients just until moistened.
For each dough divided add each flavor or nut as indicated: red-rum, green-nuts, and chocolate.
Pack the red-rum dough evenly over the bottom of the loaf pan, then green-nuts dough in the middle and chocolate on the top.
Cover with waxed paper.
Chill overnight.
Remove dough from pan.
Cut the dough into thirds, then cut into thin slices.
Place on unprepared cookie sheet. Bake 12 minutes.

Great made the day ahead and also good frozen too! It can be made in a springform pan or in a 9" X 13" baking dish.
3/4 cup butter, softened (unsalted is best for this)
1-1/2 cups all-purpose flour
6 tblsp. sugar
4 extra-large eggs
5 tblsp. all-purpose flour
2 cups sugar
3/4 cup fresh lemon juice (yes, 3/4 cup)
Combine butter, sugar and flour and mix well. Can be done in the food processor as well. Press into a springform pan or 9" X 13" baking dish (metal is best)
Bake at 350 degrees F. for 20 minutes or until just colouring on the edges.
Beat eggs until light. Mix flour and sugar together and whisk into eggs. Stir in lemon juice and pour over baked base.
Bake for 20 - 30 minutes or until topping fairly solid.
Let cool completely before cutting.
Serve sprinkled with a little icing sugar when cool.

Mix all ingredients well. Drop by round tablespoon 2 in apart on greased cookie sheet and bake 15 min.
I make the cookies bigger than recipe says they are like little cakes . Don't over cook.

1 cup regular oats

1/2 cup shredded sweetened coconut
1/2 tsp. baking soda
1/4 cup stick butter, melted
3 T water
2 T cane syrup (light)
Pre-heat oven 325
Combine first 5 ingredients in a bowl; stir well. Add margarine or butter , water and syrup; stir well. Drop by level tablespoons, 2 inches apart, onto baking sheets greased. Bake 325 for 10-12 minutes or until almost set. Remove from the oven and let stand 2 minutes or until firm. Place on cooling racks. Yield: 2 dozen cookies. Yummie!

1 (12 oz.) bag semi-sweet chocolate chips
4 heaping tablespoons peanut butter
Melt chocolate and peanut butter until chocolate is melted. Stir to combine. Fold in cereal. Drop spoonfuls of cookie mixture onto wax paper coated cookie sheets. Freeze until chocolate is hard and dry.

Bake 10 minutes until golden brown.
Brush tops with vanilla glaze while still warm.
Vanilla Glaze - Stir together:
1 cup powdered sugar
1 1/2 tbsp. hot milk
1 tbsp. butter, melted
1/2 tsp. vanilla

1 1/2 cup Flour
1/2 cup Sugar

1/2 cup Corn syrup, light or dark
3 Egg whites
Spray cookie sheet with cooking spray.
In large bowl, combine flour, sugar, cocoa, baking soda and salt.
Stir in corn syrup and egg whites until blended (dough will be thick and slightly sticky).
Drop by rounded teaspoonfuls onto prepared cookie sheets.
Bake in 350 F oven 7 to 9 minutes or just until set (cookies will be soft when pressed).
Do not overbake.
Cool on wire rack.
Each cookie provides: 0 g total fat, 0 mg cholesterol, 60 Calories, 1 g protein, 13 g carbohydrate, 65 mg sodium

Combine first 3 ingredients, and beat at medium speed with an electric mixer until blended. Stir in chocolate morsels. Drop by rounded teaspoonfuls about 2" apart onto ungreased baking sheets. Bake at 350 F for 10 min. Cool on pan for 5 min; remove to wire racks to cool completely.
