Recipe: Cookie Sheet Pizza

Cookie Sheet Pizza

Pizza Dough:
2/3 cup warm water
1/2 tbsp baking yeast
1/2 tsp salt
2 tbsp sugar
2 tbsp oil
2 1/3 cup flour

Sprinkle yeast, salt, sugar and oil over the warm water and let rest until yeast foams. Mix in flour and knead for about 10 minutes, then let rise until double.

Roll the dough out to fit a cookie sheet for a large pizza pan. It will be pretty thin skin. Spread this with the sauce and toppings.

Bake in 500F (200C) for 15-20 minutes.

Toppings or your choice (olives, soy cheese, fake ham, dried tomatoes, mushrooms, pineapple etc, etc)

Pizza Sauce:
1 small onion
3 tbsp oil
4 oz tomato paste
1 cup water
3/4 tsp garlic powder
1 tsp oregano
1 1/2 tsp chili powder
2 pinches allspice
1 pinch black pepper
1/2 tsp basil
small pinch cayenne
1/2 tsp salt
5 tbsp sugar

Fry the onion until transparent. Add the rest of the ingredients and simmer for about 15 minutes.

Makes one cookie sheet size pizza
