COWBOY BEEF DUMPLINGS
1 can (10 count) flaky biscuits
1 1/2 pounds lean ground beef
1 (26 ounces) jar spaghetti sauce
2 cups fresh spinach, finely chopped
1 cup shredded carrots
8 medium mushrooms, thinly sliced
Salt and pepper (to taste)
2 cups shredded mozzarella cheese
Preheat oven to 400 degrees F.
Cut biscuits into fourths and place evenly in bottom of greased 13x9-inch baking dish.
Bake biscuits 8-10 minutes or just until set but not browned.
WHILE BISCUITS ARE BAKING:
Brown ground beef in a large skillet; drain.
Combine cooked ground beef, spaghetti sauce, spinach, carrots, mushrooms and salt and pepper in the large skillet and cook over medium heat until mixture is warm throughout, stirring occasionally.
Pour beef mixture over biscuits after they have baked for 8-10 minutes.
Bake again for 15-20 minutes or until bubbly. Add cheese to top 5 minutes before the dish is done and return to the oven to let cheese melt completely.
