Recipe: Adobo Sirloin

Adobo Sirloin

1 lime, juiced
1 tsp minced garlic
1 tsp oregano
1 tsp ground cumin
salt and pepper to taste
1 (7 ounce) can chipotle in adobo
2 lb sirloin steak

In a small bowl combine the lime juice, garlic, oregano, cumin, salt and pepper. Finely chop the adobo peppers and add to the mixture. Taste for heat and add some of the juice from the can, if desired.

Puncture the steak with a fork several times. Place steak in a dish and pour the marinade over it to coat. Marinate for at least 2 hours or overnight in refrigerator.

Preheat the grill to high. Grill the steak to desired doneness.

Cook's note: Marinating times vary for different foods. Usually the longest you want to marinate anything is overnight. After that, marinating tends to waterlog food, making it soft and mushy.
