I was pleased to see someone else has an interest in this great food! It's been a tradition in our family for many years. I just made one batch yesterday and am working on one now.
PUGACHI
I start with a white bread recipe for my breadmaker and just make the dough and let it rise. I then cut it into three pieces and roll them into circles.
For filling, we have traditionally spread mashed potatoes on half of the circle followed by a mixture of mild sausage and sauerkraut. Brush egg white/water mixture around the edges of circle and then fold over into a semi circle and press edges together to seal. Cut slits in the top and brush top with egg white mixture to help brown.
I cook about 20-30 minutes at 350 degrees F or until brown all over.
For the kids, we also make some with a cheese filling only - american or mozzarella - and we have also made a pizza filling with pizza sauce, mozzarella and pepperoni. YOu can put anything you want in them.
