Here are some flavoring variations for you to try. Regarding your question about freezing, I believe homemade candy freezes well but in thawing you may get condensation and water marks. Because of all the factors involved I don't think anyone can gaurantee the results - your best bet is to try freezing a few from each batch you make and see how you like the results when they thaw.
