Recipe(tried): Cream Cheese Wontons

I just took a class from a Chinese restaurant owner and this is what he made. Pretty easy and good. Hope this is what you were looking for.
CRISPY WONTON WITH CRABMEAT AND CREAM CHEESE
4 ounces crab meat
1 pound cream cheese, softened
1/4 cup celery, finely chopped
1/2 cup onions, finely chopped
1 tablespoon white wine
24 each wonton wrappers
salt and white pepper
1 egg, beaten
oil
In large bowl combine cream cheese, celery,and onions. Mix well then stir in crabmeat. Season with salt and pepper to taste.
Place 1 wrapper on work surface with 1 corner nearest you. Place 1/2 tablespoon filling in the center. Moisten sides with egg wash. Fold over top to create a triangle. Pinch to seal well. Repeat with remaining.
Fill a pan with 1/2 inch oil. Heat to 375 degrees over high heat.
Add the wontons several at a time and fry until golden, about 3 minutes. Remove and drain on paper towels. Can keep warm in 200 degree oven until all complete.
Can also shape any way you'd like - like tortellini.
