Recipe(tried): Creamed chipped beef
Misc.This has always been a favorite in our house! Start with the white sauce, be sure you use real butter, and if you want it nice and rich use evaporated milk or half & half for the liquid. I make about 2 cups for one jar of dried beef. When it's smooth and thickened, take it off the fire and add the chipped beef. Then, and here's the kicker, add one egg yolk (stir in quickly, so it doesn't scramble). This is SO rich and tasty. I also add pepper.
If you want to be really indulgent, bake a container of refrigerator biscuits (Pillsbury, Hungry Jack, etc.), and serve the creamed chipped beef over the split biscuits. Also, when I was a kid in Kansas City, there was a cafeteria that served chipped beef over rice for breakfast! Sooooooo goooooood...
