Recipe(tried): Creamed Peas and Pearl Onions
Misc.Here's the Recipe that Mom always uses at THanksgiving
CREAMED PEAS AND PEARL ONIONS
First, make a cream sauce:
4 tbsp of butter (use the real thing - there's no substitute)
4 tbsp of flour (not self-rising)Heat in pan over med - med high heat (don't let it burn). Stir constantly
until all butter and flour are blended and start bubbling.
Add 1 - 1/2 cup of milk. Keep stirring. heat until it begins to boils turn down and keep stirring until it is thick. Add more milk if you think it's too thick for the cream sauce.
At this point, you can add a little mustard (dry) to get that slightly yellow tinge and a little tang to the sauce. You can also add a little lemon juice.
You could also make it cheesy by adding cheddar (shredded) to it.
Now, add green peas already cooked and pearl onions (peeled and boiled until tender). Add salt and pepper and VOILA! Killing creamed peas and onions!
