ONE-EGG SPICE CAKE WITH BROILED COCONUT TOPPING
1 1/2 cups sifted all-purpose flour
3/4 teaspoon salt
2 teaspoons double-acting baking powder
1/3 cup shortening
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1 cup sugar
1 large egg
3/4 cup milk
FOR THE BROILED COCONUT TOPPING:
3 tablespoons melted butter or margarine
1/3 cup light brown sugar
2 tablespoons evaporated milk or light cream
1/4 teaspoon ground nutmeg
1/2 cup shredded coconut
Preheat oven to 350 degrees F. Grease well and lightly flour a 9x9x2-inch baking pan.
Sift together flour, salt and baking powder and set aside.
Mix shortening with spices. Gradually blend in sugar. Beat in egg. Add flour mixture alternately with milk. Beat batter for 30 seconds. Turn batter into prepared pan.
Bake for 35 minutes or until a toothpick inserted in center comes out clean. When cake is done, remove from oven and turn oven to Broil.
Meanwhile, combine ingredients for the topping. Spread topping over hot cake. Place under broiler until topping is bubbly and brown (about 5 minutes), watching closely that it doesn't burn.
Makes 1 (9x9-inch) cake
