Recipe(tried): Creamy Cool Peach Desert

Yesterday I found some lovely white peaches at Sprouts. When I got home it was late afternoon and very hot. I wanted to make some sort of cream cheese desert with them. I found a recipe for a peach cream cheese pie online and made the glaze recipe from it. (recipe follows)Then I took a pkg of fat free cream cheese and mixed it with some sugar to taste. I divided it between four small ramikins, topped the cheese mixture with sliced white peaches and then with the cooled peach puree mixture and chilled them. Very yummy and and nice cool desert for a very warm night.

PEACH PUREE GLAZE

2 Tablespoons cornstarch
3/4 cup sugar
1/2 cup peach puree (about 1 white peach, pureed)
1/2 cup water
2 Tablespoons lemon juice

In a saucepan combine cornstarch and sugar with a whisk. Blend in peach puree, water and lemon juice. Bring to a boil, stirring; boil until thickened and clear. Remove from heat; cover with plastic wrap and allow to cool.
