I made this recipe this month, and it was the easiest way to make apple butter that I have ever tried. This recipe uses apples sauce, but I just put my apples through my food mill and got it to the applesauce stage then measured out that to make it. I even used the crockpot idea to make pear butter and peach butter so far. Worked great...just use the regular recipes for those in my canning books. But the great thing is you don't have to stand over them for hours stirring them so that they don't scorch! So here is the recipe for the crockpot apple butter to can.
7 cups Applesauce unsweetened
2 cups apple cider the kind you drink...not vinegar!
1 1/2 cups honey - use a mild type
1 tsp. ground cinnamon
1/2 tsp. ground cloves
1/2 tsp. allspice
In a crockpot, (or if you make a big batch...use your nesco roaster....I did and it worked great, just put on low heat.) mix all ingredients. Cover and cook on low heat for 14 to 16 hours....(I made mine about 6:00 at nite then left it going all nite and by noon the next day I was processing it). You want it too be deep brown. Pack while hot into 4 hot pint jars. (I put mine in 1/2 pints). Process in hot-water bath for 10 min., counting the time after the jars have been immersed and the water comes to a rolling boil again. Hope you enjoy it as much as we have! Now, I'm going to try the carmel applebutter recipe I just found here! But I'm going to use the crock pot!
