Recipe(tried): Crockpot Cassoulet

This is a family favorite. Serve with warm bread.

Crockpot Cassoulet

1 large onion, chopped
3 small carrots, thinly sliced
3 garlic cloves, minced
3 (15 oz) cans great northern white beans
3 tsp. chicken bouillon granules
1 Tbsp. tomato paste
1 bay leaf
1 tsp. dried thyme leaves, crushed
1/4 tsp. pepper
1 1/2 lbs chicken thighs, cut in half
1 lb. kielbasa, cut in 2 inch pieces
1/4 lb. bacon, cut in 1 inch pieces

Layer ingredients in crockpot in order listed. Do not stir.

Cook on low 7-8 hours, or until vegetables and meat are tender. Remove bay leaf prior to serving.
