Today is karate day for my kids, and their lesson is right at dinner time, so a crockpot dinner is just the thing to see us through.
I started this going this afternoon, just before I headed out to the garden for a few hours of hard labour. I pulled the carrots (ooh, they're delicious!) and added some compost, and planted some mustard greens and Swiss chard. It's kind of hot out today, so we'll have to see if the germinate, or maybe I'll need to take a second pass at them later, after the weather cools a bit.
I got this recipe from a local grocer's flyer. It was for baking in the oven, for an hour and a half. It screamed out CROCKPOT to me...so I answered with this version that follows...
Crockpot Tandoori Pork (or Chicken, or even both!)
a tin of pineapple chunks, drained
jar of tandoori sauce
a couple of sliced onions
pork chops or chicken breasts
Slice onions and separate the slices, and layer them in the bottom of the crock.
Top them with the pineapple chunks.
Mix a bit of pineapple juice (from the tinned chunks) with a little tandoori sauce, and pour it over the onions and pineapple chunks.
Put the pork chops, or chicken breasts on top, and spread each with a little of the tandoori sauce.
Cook for a few hours, at least 4, on low. I usually use the auto setting, or start out the machine on high for an hour, anyway. But it depends how much is in there, we're not big meat eaters, so it's not so long to cook.
