Good morning. Tell me Beth why can't you just simply bake a cheesecake. You do not need to use a cookie-type crust. Or, you can & then remove that portion for your daughters portion. You have many choices for covering from blueberries to cherries to strawberry & well as carmel topping with pecans if you like. Betsy has just posted a Banana-Cheesecake Recipe (click here). If that doesn't do you post back & I will post a few for you if necessary. This is much easier than making a flourless cake. They do not come very well & are tasteless as well (My opinion anyway). Beth, please note, quickly looking at these recipes I didn't notice any flour used but you'll need to look at the ingredients and instructions carefully (as I'm sure you do all recipes) before serving to your daughter.
