Recipe: Crustless Quiche

Crustless Quiche

1 cup cottage cheese
1 cup sour cream
4 tbsp. flour
4 eggs
1/2 cup Parmesan cheese
1 tsp. garlic salt
4 drops Tabasco
2 cups shredded cheese (your choice)
1/2 lb. crumbled cooked bacon or diced ham
Vegetables - your choice - optional

In a blender, mix cottage cheese, eggs, sour cream, flour, Parmesan cheese and seasonings. Blend on high speed until smooth and thick.

Spray your quiche pan/pie pan with Pam. Mix shredded cheese, meat and vegetables in quiche pan. Pour batter over and mix with fork.

Bake 350 degrees for 60 minutes or until brown and firm. Great for brunch.

This isn't exactly what you're looking for but maybe you can modify it to get similar results.
