Recipe: Cucumber and Onion Salad with Dill (2)

Cucumber and Onion Salad

3 cucumbers, 6-inches long
1 bunch green onions

MARINADE:
1/2 cup white wine vinegar
1/2 cup sugar
1 tbsp. dill weed
1 tbsp. salt
1/2 tsp. white pepper

Slice cucumbers thin. Turn into bowl. Slice green onions diagonally as thinly as possible. Add to the cucumbers. In small bowl, mix vinegar, sugar, dill weed, salt and pepper. Whisk with fork until blended. Pour over onions and cucumbers. Turn to coat all pieces. Marinate 1 hour or more. Drain off some of the marinade and put cucumbers into a bowl.

Cucumber and Onion Salad

2 medium cucumbers, thinly sliced
2 medium onions, thinly sliced
1/3 cup cider vinegar
1/3 cup water
2 tbsp. sugar
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. celery seed
1/8 tsp. dill or 1 tsp. fresh dill

Slice cucumbers and onions into 1 1/2 quart glass bowl. Mix remaining ingredients in small bowl and pour over cucumbers and onions. Cover and refrigerate 3 hours, stirring occasionally. Drain and serve.
